These bronzed potato patties with a crispy spice on the outside or aloo tikki in Urdu and Hindi bring me back to my school days in Lahore. We lined up for Apas Aloo Tikki: each was neatly placed in the middle of the warm naan and folded for a mobile snack during the break. This street-food-style snack, enjoyed from Pakistan to India to Bangladesh, goes wonderfully with a cup of chai in the late afternoon, as a side dish to morning eggs (over, hash browns) or with a glass of sparkling wine during the cocktail hour. Scented with fresh coriander, mint and cumin, dip the donuts in fiery hari chutney (green) to enjoy them to the fullest.
This recipe calls for cayenne pepper, but if you prefer more heat, use the ground red chili powder that can be found in South Asian grocery stores. Well worth sourcing rice flour as it offers a really amazing crunch, but all purpose flour works. – Shayma Owaise Saadat
