Avocado Going Bad? Use It In This Chocolate Mousse Recipe : NPR

After examining almost every avocado in the product department, you’ve picked the perfect one … only to leave it on your counter a little too long. Now it’s not that green and a bit muddy, and it feels like you’re about to throw $ 1.70 straight into the trash can.

Food waste is not only bad for your wallet (and maybe your dinner plans), it’s bad for the planet too. Wasted food matters up to 10% of man-made greenhouse gas emissionsAccording to a 2019 UN report.

This simple chocolate mousse recipe is the perfect way to keep your avocados from becoming part of that statistic. Right, you can make chocolate mousse with overripe avocados. This recipe is from Waste-free kitchen manualby Dana Gunders.

Wondering how far away your avocados can be to work in this recipe? Gunders goes on to say, “I’ve tried this recipe with extremely overripe avocados and it’s amazing how delicious it still is.”

Buried avocado chocolate mousse


  • 2 large * ripe or overripe avocados
  • ¼ cup of milk, milk substitute or yogurt (optional)
  • ½ cup of agave nectar, maple syrup, honey or fine sugar and more if desired
  • 5 tablespoons of unsweetened cocoa powder and more if desired
  • 1½ teaspoon vanilla extract
  • ⅛ teaspoon of salt

Optional toppings:

  • Raspberries, blueberries, sliced ​​strawberries
  • Sliced ​​banana
  • Desiccated coconut, toasted
  • Lemon peel
  • Chopped nuts
  • Whipped cream


Scoop the avocado meat into a food processor. Add the milk (if used), agave nectar, cocoa powder, vanilla and salt and process until lump-free and velvety. Try and add extra sweetener if desired. More cocoa powder can be added (1 teaspoon at a time) for a darker chocolate flavor. (Alternatively, if you’re making by hand, mash the avocados with a fork first, then mash the remaining ingredients.)

The mousse is kept in an airtight container in the refrigerator for at least a week.

* If you have small avocados, mix them with 5 tablespoons of sweetener, 3 tablespoons of cocoa, 1 teaspoon of vanilla and a pinch of salt. Try, then add small amounts of cocoa and / or sweetener to taste.
