This super cozy casserole from the recipe developer Asha Loupy is inspired by classic Eastern European cabbage rolls, but takes a sheet – or a layer, if you will – from the lasagna manual. Blanched cabbage leaves are stacked with flavored beef ragout and lemony herb rice for a casserole that’s full of all the flavors of cabbage rolls without rolling. Asha has two tricks for the perfect cabbage roll casserole (no mushy rice or moist soil here!). First, reduce the tomatoes until they reach a thick, almost pasty consistency. This ensures you get clean slices without a runny, runny sauce. Second, cook the rice (as you like) tahdig or Biryani) and sprinkle it lightly between the layers. This gives the grains room to cook to fluffy perfection while baking.
