Crispy Miso-Butter Fish With Asparagus Recipe

It’s hard to resist the lure of crispy food. Here, fast-cooking fish fillets are foamed in a deeply aromatic combination of miso, butter and panko and then grilled until the breadcrumbs form a roasted, golden crust. My days as a line chef at Perry St restaurant in New York inspired the technique behind this dish. It was my first job outside of cooking school, and in the winter we made a similar dish out of cod topped with a thin sheet of truffle butter fortified with panko. This is a simpler, far more accessible version that is just as delicious. I use my preferred technique to cook fish skin-on (it holds the meat together when cooked), but with no intention of making it crispy – I just lift the fish away from the skin when it’s time to serve. I find chasing crispy fish skin to be a heartbreaking endeavor, so I don’t even care. Plus, with all the texture from the Butterpanko store, you won’t miss it. – Shilpa Uskokovic
