Fat Choy Is Making Very Good, Very Vegan Chinese Food

“We’re not trying to get our agenda moving,” says Justin Lee, head chef and owner of Newcomer’s Lower East Side Fat Choy. “We’re just trying to make delicious food that you crave and you shouldn’t have to worry about whether it’s vegan or not.” While Lee identifies himself as a carnivore (in fact, he worked at a restaurant called Cannibal), his decision to open a meat-free restaurant was not a light one. The vegetable-focused menu at Fat Choy is a love letter to the Chinese-American restaurant with a desire to reduce the environmental impact of the restaurant industry. “We’re people who love food,” says Lee. “That’s what we’ve chosen, and this is our platform to try to change the world for the better.”
