Thai Roast Chicken Thighs With Coconut Rice Recipe

Chicken legs marinated with coconut milk, lime juice, and fish sauce add plenty of umami to this one-pan meal. If you line the pan with wedges of cabbage, you can catch every drop of the rich juices as they melt in your mouth. While the chicken is roasting, there is enough time to make fragrant rice with the leftover coconut milk and slices of ginger. This dish was inspired by the fried chicken at the now-closed Uncle Boon’s, one of my favorite New York restaurants. They had it on rotating cabbage spits to catch any juices. This thigh-at-home version is a more approachable way to bring out all of those great flavors. – Diana Yen
